One of the amazing things about the mezcal world is that most, if not almost all, mezcal producers are family operations. Few have a lineage as long as Asis’ but the foundation of most mezcal is family control which is really important to the quality and variety of what is in your glass. Those families have well defined perspectives on what mezcal should taste like, how it should be produced, and how their work is connected to surrounding communities.
